Chocolate Chip Protein Cookies

I find getting enough protein each day is tricky...I aim for about 140g of protein and if I'm not prepared to each chicken/tuna for my morning snack (uggh) & want something different than greek yogurt then, I'm short on options.

These cookies I keeps my appetite steady by:

  • pairing slow digesting protein (cottage cheese) with fast digesting protein (whey),

  • including healthy fats of coconut oil, and

  • ​complex carbs of whole wheat flour & oatmeal.

I have 2-3 hard boiled egg whites with this mid-morning snack to get in an additional 10 g of protein.

Makes 14 Cookies (1 serving is 2 cookies)

Ingredients

  • 1/3c whole wheat flour

  • 2/3c whey protein powder (low carb)

  • 1/2c cottage low fat cottage cheese

  • 1/2 tsp baking powder

  • 2 tbsp honey

  • 4 tbsp melted coconut oil

  • 1 egg

  • 1/3 c old fashioned oats (ground)

  • 1/4c dark chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.

  2. Mix all ingredients together.

  3. Drop a heaping tablespoonfuls onto an oiled or parchment-paper lined baking sheet

  4. Bake 10-12 minutes until the cookies are slightly brown on top

  5. Enjoy!
