Power PB&J Crunch

Peanut butter and jelly...what is it about this combo that comforts the soul? Now that I'm into my second trimester of pregancy all these craving foods are calling my name...do I need more of an excuse to grab a spoonful of each and indulge?

I've committed to not repeating my nutrition disaster of my 1st pregancy, so I've sought out healthier versions of these craving foods.

This one I'm calling Power PB&J Crunch, and mmmmm.....a great mid-afternoon power snack.

Makes 7 Servings

Ingredients

  • 1c pitted dates

  • 1/4c water

  • 1/3c natural PB (smooth or crunchy)

  • 1/4c ground flaxseed

  • 1c whey protein (low carb)

  • sprinkle sea salt

  • 1/2 c apricots

  • Granola

Instructions

  1. In a food processor, blend together dates & water

  2. Add in peanut butter and process until smooth. Add more water as needed.

  3. Add protein powder, flaxseed & salt, and process to combine thoroughly.

  4. Add apricot pieces and pulse to incorporate mixture.

  5. Put 1/3 c of granola in 7 small tupperware containers, spoon a heaping tablespoon of the PB&J mixture. Mix slightly.

  6. Store in refridgerator.

  7. Enjoy!
